Agar Agar is a natural water-soluble hydrocolloid that is used in icing, glazes and filling formulations to stabilize against weeping and breakdown under extreme conditions and to provide extended shelf life. In providing moisture migration control, Agar Agar, mitigates the potential for cracking, separation, and adhesion to packaging. Agar Agar acts to slow down sugar crystallization resulting in smooth applications.
