Kake Mate Emulsifier

Kake Mate is an all-purpose cake emulsifier for both sponge and shortening batters that provides increased tolerance and stability for improved handling, quality and shelf life. It disperses quickly in batters and helps strengthen protein cell walls to improve aeration, stability, and mixing tolerance. Its high affinity for water allows the use of additional water in the cake formulation leading to lower bowl costs. As a unique blend, Kake Mate, slows down starch retro-gradation to extend shelf life.
