Proform CS is a hydrated all-purpose bread and cake emulsifier that provides both conditioning and softening to extend shelf life. It disperses quickly in batters and doughs and helps strengthen protein cell walls to improve aeration, stability, and mixing tolerance. The result is a more symmetrical finished product with better uniform grain, texture, volume and superior eating characteristics. The hydrated form provides significantly improved efficiency over powdered products. Proform CS should be used in conjunction with Kake Mate to provide optimum performance in cakes.
